So far I have only seen blonde Blood Elf pics. Please tell me they'll actually have different hair colors beside variations of blonde. I mean, if not how will we tell them apart, eye color?

All of the races tend to be shown in a type of iconic image when promoting them, and especially when showing them off in any type of promotional manner. Similar to a light pink skinned nigh elf with purple hair, a pale green orc with no hair, or a dwarf with a full red beard, it helps to show a "character" with a very specific look to build ease of recognition.
There will be a variety of colors available though of course, and hairstyles too.

As I'm not sure if they have been finalized I wouldn't want to name anything specifically just yet in the event that they were to change.
I believe blonde, brunette, and grey/silver have all been seen in screenshots so far. Those are of course subject to change though.
