Offense: What offense? Shadow used to be a formidable offensive tree, but with recent buffs of other classes, it has become weak in comparison.

Susanah, I do agree that Priests are in need of some improvement, which the next patch will bring about. However, stating that they have no (or even little) use makes me question how you play, and more importantly how you're gauging class effectiveness.
With my Holy/Disc Priest, I've successfully healed in every five-man instance in this game, save BlackFathom Depths, which my Priest happened to skip completely. To elaborate, I've done each of these instances as the only healer. Beyond this, I've been the only healer on both sides of Stratholme in a four-man group, in which case even single incident deaths were avoided. When do I group with other healers, I'm generally not concerned with who is "out-healing" who (which oddly enough is usually me). Rating high on an inaccurate healing meter isn't really a testament to my skill, the skill of another or the effectiveness of the group as a whole.
My point is, I am very useful as a Healing Priest in supporting a party.
Concerning defense, Power Word: Shield provides great damage mitigation, though we are definitely looking into how it scales towards the end-game. At your level, it would be a great error in my opinion to disregard this spells usefulness. You can Shackle Undead, just as the Mage can Polymorph Humans and the Druid can Sleep Beasts. Perhaps, you're referring to PvP crowd control?
The Shadow tree offers great offensive capabilities. I'm confused, do you have another Priest above level 30 which you've tested your claims with fully?
Edit: Unfortunately, the original poster deleted the thread as I responded and thus it appears I created the topic. In any case, my response was posted and the original message preserved in the quote, so I see no reason to delete this thread. Power word shield (In most of the current BWL fights, only one or two warriors is tanking, so only one or two priests can use this spell every 15 seconds).
Renew (only one priest can use this per target).
Prayer of healing.
4 spells is it? Personally I wouldn't mind maybe having more spells and maybe more fun, but that's just me.
If you toss in our shadow spells:
mind blast
sw:p
mind flay (with talents that raiders can't afford to get)
Priests have 7 total non-buff spells that are useful in the game. SO MUCH FUN!
I regularly use the following spells and abilities:
Flash Heal
Prayer of Healing
Renew
Power Word: Shield
Fade
Inner Focus
Shadow Word: Pain
Mind Blast
Mind Control
While more situational, I still often use the following spells and abilities:
Psychic Scream
Shackle Undead
Shadow Protection
Resurrection
Mana Burn
Cure Disease
Mind Control
I'm sorry that you're choosing to use only seven non-buff spells available to your class.
