No the massive and lumbering Cow-people blizzard turned them into?
What would be cool is an added option in the character selection which changes the characters figure. Like big and bulking for warriors and sleek and thin for hunters etc. Or even it comes built into the class?

I do believe you're confusing Tauren with Minotaurs. Tauren, in official imagery, have never been thin and sleek:

As a general rule, I don't answer yes or no to such questions, Edingan. As I am meant to be a liaison, giving my own opinion on suggestions can cause significant issues.
That said, I would say the same thing regardless of your question. "Do you think delivering a large box of cash to Blizzard HQ is a good idea" would receive the same answer. :P

Female Tauren have two mammaries located on their upper chest region because they are bipedal, and cradle their children much as Humans and other such bipedal sentient creatures do. The location of an udder on a bipedal creature would be quite awkward for movement and other activities, not to mention lack effectiveness for the task in comparison, all told.
As for evolution, no one ever said Tauren evolved from cows. Of course, then we start to get into Azeroth Creationism vs. Azeroth Evolutionism, which is a large can o' worms. :D
